Our Cooking Process

Here’s a wholesome and balanced vegan dish you can create using quinoa, broccoli, brown rice, pumpkin seeds, eggplant, peas, and carrots. Let’s call it "Quinoa and Brown Rice Veggie Bowl with Roasted Eggplant and Pumpkin Seeds."

Ingredients (Serves 4):

  • 1 cup quinoa
  • 1 cup brown rice
  • 1 small eggplant, diced
  • 1 cup broccoli florets
  • 1/2 cup peas (fresh or frozen)
  • 2 medium carrots, thinly sliced
  • 1/4 cup pumpkin seeds
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp cumin powder
  • Salt and pepper, to taste
  • Fresh herbs (like parsley or cilantro), chopped (optional)

For the dressing (optional):

  • 2 tbsp tahini
  • 1 tbsp lemon juice
